Grilled Bacon and Avocado Burger with Chipotle Mayo

For the Burgers:

  • 4 Heritage Homestead Farms grass-fed beef hamburger patties
  • 4 hamburger buns
  • 4 slices of cheddar cheese
  • 8 strips of bacon, cooked until crispy
  • 2 avocados, sliced
  • Lettuce leaves
  • Tomato slices
  • Red onion slices
  • Salt and pepper, to taste

For the Chipotle Mayo:

  • 1/2 cup mayonnaise
  • 2 tablespoons adobo sauce (from canned chipotle peppers)
  • 1 teaspoon lime juice
  • Salt and pepper, to taste

Instructions:

1. Prepare the Chipotle Mayo:

  • In a small bowl, whisk together the mayonnaise, adobo sauce, lime juice, salt, and pepper. Adjust the adobo sauce to your desired level of spiciness. Set aside in the refrigerator.

2. Grill the Hamburger Patties:

  • Preheat your grill to medium-high heat.
  • Season the hamburger patties with salt and pepper.
  • Grill the patties for about 3-4 minutes on each side for medium-rare, or longer if you prefer them more well-done.
  • In the last minute of cooking, add a slice of cheddar cheese to each patty and close the grill lid to melt the cheese.

3. Toast the Buns:

  • While the patties are cooking, split the hamburger buns and lightly toast them on the grill until they are golden brown.

4. Assemble the Burgers:

  • Spread a generous amount of the chipotle mayo on the bottom half of each toasted bun.
