Grass-Fed Beef Chili

  • 1 pound of grass-fed ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (15 ounces) of kidney beans, drained and rinsed
  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 can (14.5 ounces) of diced tomatoes
  • 1 can (6 ounces) of tomato paste
  • 2 cups of beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste for spice)
  • Salt and black pepper to taste
  • Olive oil for cooking
  • Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, diced avocado, and cilantro

Instructions:

  1. Heat a large pot or Dutch oven over medium heat. Add a drizzle of olive oil, then add the diced onions and cook for about 2-3 minutes until they become translucent.
  2. Add the minced garlic and diced bell peppers to the pot. Sauté for another 2-3 minutes until the peppers begin to soften.
  3. Push the vegetables to the side of the pot and add the grass-fed ground beef to the center. Break it apart with a spatula and cook, stirring occasionally, until the beef is browned and cooked through.
  4. Stir in the chili powder, ground cumin, paprika, and cayenne pepper. Cook for an additional minute to toast the spices and enhance the flavor.
  5. Add the diced tomatoes, tomato paste, drained kidney beans, drained black beans, and beef broth to the pot. Stir everything together.
  6. Reduce the heat to low, cover the pot, and let the chili simmer for about 30-40 minutes, stirring occasionally. This allows the flavors to meld together and the chili to thicken. If it gets too thick, you can add a bit more beef broth.
  7. Taste the chili and season with salt and black pepper to your liking. Adjust the cayenne pepper for additional spiciness if desired.
  8. Serve the grass-fed beef chili hot in bowls, and garnish with your choice of toppings like shredded cheddar cheese, sour cream, chopped green onions, diced avocado, and fresh cilantro.
